## The stone

Black granite is the stone an Indian kitchen reaches for when something has to take real punishment. It is igneous, with a very fine crystalline grain, dense and non-porous, which is why a granite khalbatta does not drink up oil, turmeric or garlic paste the way a softer, more porous stone does. Rinse it, dry it, and it comes back to the same jet-black surface it started with. The block for this piece comes from the South Indian black granite belt, the same stone the sculptors of the Dravidian temple tradition have cut murtis from for centuries; a masala mortar is simply the domestic end of that trade. It is held at a soft satin polish rather than a mirror finish, so the stone reads deep black without turning into a hard reflective sheet on the counter.

## The form

Khalbatta is the North Indian household name for this pair: a heavy bowl and a short club, nothing else. The mortar is cut as a footed bowl: a turned collar at the base, a thick rolled rim at the top, and the whole outer wall chiselled into vertical flutes so there is something to grip when your hands are wet. The interior is hollowed deep and worked smooth but not glassy, because a mortar wants a little tooth. On a polished floor of stone, whole spices skid instead of breaking. The pestle is a short tapered club with a rounded head and a turned ring below it, weighted so the stone does most of the work on the way down rather than your wrist.

## Sizing it for your counter

Six inches across the bowl, roughly four kilos standing on the counter. That is the size that actually gets used day to day: enough room for a fistful of whole jeera and coriander, a wet ginger-garlic paste, or a coarse green chutney, and small enough to leave standing beside the stove instead of putting away in a cupboard. Weight matters here more than width. A light mortar walks across the counter while you pound, and this one stays where you put it. At this scale it also works as a wedding or griha pravesh gift, the kind of kitchen object that gets handed on rather than replaced.

## Make it yours

The bowl can go wider or deeper, the flutes can be dropped for a plain rounded wall, and a matching stone plate can be cut to sit underneath it. For gifting, a name or a date can be engraved into the underside of the foot. Black granite is the right stone for a mortar that will be worked hard (the white marbles are for decorative pieces, not for pounding), so the material stays fixed while everything else is open. Tell us the size and the wall you want, and we will design it with you, brief the sculptor who carves it, and follow the piece through to your door.
